Henriot Cuve 38

A unique Blanc de Blancs 100% Grand Cru obtained from HENRIOT's permanent reverse of Chardonnays from des Blancs, from Mesnil-sur-Oger, Chouilly, Avize and Oger. 

Assemblage
In 1990 Joseph Henriot had the idea of setting aside in the vat n38 the wines obtained from the Chardonnay grapes from the finest Grand Crus in the Côte des Blancs vineyards.

Every year, at the discretion of Chief Winemaker Laurent Fresnet, only 3-20% of the grape harvest from these four prestigious villages will enter the blend. As this wine is added, the equivalent quantity is drawn off, thus creating an extremely rare wine and a perpetual reserve. Only 1,000 limited edition magnums are released each year. Dosage is a mere 5g per litre.

Tasting Notes
Eye: pale yellow tinged with delicate golden glints. A steady stream of bubbles of rare finesse.
Noe: delicate aromas of fresh butter precede a breath of white flowers.Alongside the distinctly mineral dimension, its creamy character is underpinned by a hint of liquorice.
Palate: defined by elegance, Cuve 38 offers a harmonious succession of flavours of the utmost finesse, from citrus fruits and ripe apricot to honeyed biscuit notes.

Duck foie gras cannelloni with Perigord black truffle.
Lightly seared line-caught seabass steak on the skin, baby spinach leaves, citrus flavoured beurre noisette.
Saddle of rabbit rolled in ham, oven-roasted tomatoes and creamy parmesan risotto.
