Produced exclusively from Chardonnay. Only the first pressing of grapes form Grand Crus villages are used, from the "Côte des Blancs" region. Depending on the needs of the year, the blend includes 20 to 25% of Reserved Wines from that cuvée. During the bottling prior to second fermentation, less yeast is added than in a regular Champagne. Therefore, the fermentation creates a lower pressure (4.5 kg against 6 kg usually).This type of wine making is especially appropriate for the delicate Chardonnay varietal: it allows it to show all its minerality, finesse, elegance and freshness and balances it with a rarely found creamy texture. Aged for 4 years on the lees, this wine also benefit from a minimum of 6 months of extra age after disgorgement. The disgorgement date is written on the back label.

100% Chardonnay from Côte des Blancs Grand Crus. Dosage: 6 to 7 g/l

Tasting notes
Eye: Very pale gold colour, bright, almost silvery, with green tinges. Very fine bubbles slightly less abundant than other Bruno Paillard wines because of its less powerful fermentation in the bottle

Nose: Floral (white flowers), with initial aromas are distinctly citrus – lime, grapefruit. Once open notes of grilled almond and crusty bread appear

Mouth: Vivacious attack that provokes a complex array of flavours, from citrus to white fruit. The very particular and mineral chalky quality is evident. The finish is long and fresh

Food pairing
An ideal aperitif, it also accompanies dishes with fish, up to an entire meal provided there is no overly spicy or sweet course
