This exceptional cuvée expresses freshness and maturity, complexity and richness, all at the same time.All grapes have been harvested in vineyards formerly owned by the Abbey of Clairvaux: old vines on hill sides facing south. Well exposed and powerfully calcareous parcels produce expressive wines . After bottling, the cuvée is aged for at least 5 years sur lattes (on laths).

Blend
65% Pinot Noir, 35% Chardonnay. 50% of the wines are matured in oak barrels for 1 year. Minimal use of sulphur. Dosage: 5.6 g/l

Tasting Notes
Eye
Lightly gold tinge.

Nose
A very complex, rich nose comprising hints of citrus fruits, bread, hazelnuts and almonds. A touch of vanilla testifies to the high proportion of Chardonnay while the depth of the Pinot Noir is expressed in the form of red fruits and violets.

Palate
Creamy with loads of fruit.

Food Pairing
Ideal as an aperitif. Perfect with blanquette of veal, risotto, chicken fricassee or sole à la plancha. Serve at 7°C
