Dom Ruinart is a Blanc de Blancs prestige cuvée blended using Chardonnay grapes from grands crus villages from de Côte des Blancs and 34% and the Montagne de Reims. 

2006 Vintage
2006 could be summed up as a very cold winter and a very hot summer. However, behind these seasons lies a wine-growing year that is a little more complicated. Luckily several spring frosts only caused a little damage and the contrasts of the year were notably revealed with the summer. There was a heatwave in July, followed by a cold, wet August allowing the water in the soil to be replenished. The first fortnight of September was hot and sunny, accelerating the ripening of the abundant harvest. Then it became cooler with some rain forcing the winemakers to finish picking and keep only the very best grapes. The wine harvests were particularly spread out according to sector with opening dates varying from 7 to 25 September.

100% Chardonnay, only from Grands Crus.
-63% from Côte des Blancs (predominantly Chouilly, Le Mesnil and Avize)
-37% from the northern slope of the Montagne de Reims (predominantly Sillery and Puisieulx).
Dosage: 4.5 g/l

Tasting Notes
EYE: A pale yellowish green with silvery reflections.
NOSE: A very fresh fruity palate, mixed with floral notes: citron (a very sweet citrus fruit), stone fruit (nectarine and yellow plums), and ripe white fruit with linden and lily-of-the-valley providing floral notes. The nose continues to develop into a fresh floral register, peppered with several “green” spicy notes.
PALATE: Fresh, delicate notes are found, completed by lightly toasted, brioche aromas, typical of Dom Ruinart. The finale offers delightful citrus fruit notes giving a silky, refreshing acidity.

Food Pairing
Dishes combining a silky texture and sweet freshness go best with the equilibrium of Dom Ruinart Blanc de Blancs 2006. White fish or poached shellfish seasoned with herbs, citrus fruit zest and accompanied by a creamy element (cauliflower mousseline, fennel purée, etc.) provide a delightful pairing.
