Bollinger R.D. champagne 2002 is produced via extremely long ageing time, that transforms the aromas into an infinite sublimation. An absolute alchemy takes place in the wine, through the slow process of the yeast autolysis. 2002 is one of the most promising vintages of the last decade. A full-bodied, powerful but well-balanced champagne. Characterised by a very long maturation, more than three times longer than required by the appellation (3o months for vintages champagne), id develops a very wide array of flavours. An Extra-Brut champagne with 3 to 4 g/l.

The Blend
60% Pinot Noir, 40% Chardonnay. 23 crus: 71% Grands crus, 29% Premiers crus. Dosage: Extra-Brut with 3 to 4 g/l

Tasting Notes
Eye: Golden with subtle highlights

Nose: Aromas of stewed ripe fruit, particularly quince, but also a discreet note of honey. These are followed by roasted notes and cocoa, which give way to flavours of star anise and nutmeg

Mouth: Full-bodied attack. Powerful but well-balanced, with persistent flavour. Mineral finish with touches of lemon revealing a pleasing bitterness

Food Pairing
All types of risotto, especially mushrooms or truffle risotto. Venison. Old Comté or Swiss Gruyère
