This new unique Blanc de Noirs cuvée bears the name of the patron saint of Mareuil-sur-Aÿ. The one hectare one-hectare Clos Saint-Hilaire has always belonged to the family and responds to the most stringent norms: a single, unbroken and enclosed plot with a complete vinification installation in situ.

Its vines, planted and pampered since 1964, have developed all the qualities of the best crus. The parcel's isolation and south-southeast exposure result in a micro climate ideal for the even, optimal ripening of the grapes. The terroir's quality combined with the vintner's skills make this wine exceptional.

Made only from Pinot Noir vinified in barrels, it develops an outstanding purity. Billecart-Salmon decided to add very little dosage after disgorgement in order to let the typicality of the single grape used to make this great wine evolve.

This cuvée, hallmarked by chalk and its alluvial soil, stands out for the complexity of its aromas combined with a surprising freshness in a great wine.

For each vintage, there will be a limited release of 3,500 to 7,500 individually numbered bottles

The wine's complex sensorial and mineral nose is characterised by deep grilled aromas conveyed by rich notes of ripe quince and orchard fruits.

A powerful, noble, and elegant dimension with the rare density of a magnificent year, intense and generous.

Food Pairing
With foie gras, shellfish or truffle dishes. Serve between 12°C and 15°C.

It will mature wonderfully over the next 20 years.
