The bottles reserved to Oenothèque are for the cuvées that had a long stays on their lees, with a style that is a subtle and intriguing balance of youth and maturity, allowing the wine to age gracefully for an unlimited time. The Oenothèque label indicates that a Dom Pérignon vintage has reached either its second peak in maturity, with optimized intensity (15 to 20 years after harvest), or its third peak, with optimized complexity (after 30 years on the lees). The Oènotheque is realised only when the wine has reached that optimal stage in its evolution, at the sole discretion of the cellar master. To guarantee its excellence, each and every Oenothèque bottle is tasted at disgorging by a Dom Pérignon winemaker

Tasting Notes
Eye: Verdant gold colour

Nose: The praline rapidly combines with citron and dried figs. Darker underlying iodine and peaty notes also emerge. The ozone nose is so typical of an oenotheque

Palate: At first deceptively understated, the wine turns positively explosive and layered. A bright acidity, really zesty, alive, effervescence followed by a really rich toastiness and depth. Great balance between fruit and acidity.Elegant and powerful on the palate.
