The Bruno Paillard N.P.U “Nec – Plus - Ultra” was born from the idea to try and create the greatest possible Champagne wine, whatever the constraints. To do this, the most qualitative choices have been made at each step of the production of this outstanding champagne. The grapes selected for the N.P.U. come exclusively from only 5 Grand Crus villages: Cramant, Chouilly, Mesnil sur Oger, Versenay and Bouzy. As always at Bruno Paillard, only the first pressing of the grapes – the purest – was retained. But an essential difference with the N.P.U “Nec - Plus - Ultra” Cuvée is that the wine is fermented in small oak barrels, where it then rested for a further 9 months. During that period, each cru asserted its complexity and gained those slightly oaky aromas that used to be found in Champagne wines long ago. The bottles return to the cellar after disgorgement for a further 18 months ageing before the launch on the market

The Blend
50% Chardonnay, 50% Pinot Noir from Grand Crus only. Dosage: 5 g/l

Tasting notes
Eye: Yellow-gold with very small bubbles

Nose: Spicy ginger, brioche, hazelnuts secondarily and finally aromas of eau de vie

Palate: A mixture of complimentary nuttiness and fruitiness, brioche, oak and toffee

Food pairing
It can be enjoyed on its own, as an aperitif, or accompany a whole meal, provided no spicy or sugary food is served

Ideally served at cellar temperature of 10c
