Bruno Paillard's Blanc de Blancs 1995 is made from a selection of grapes that come from four highly-rated vineyards in the Côte des Blancs. The weather conditions in 1995 followed a ritual pattern. A mild and very wet winter was followed by two warm fist weeks at the start of April. Budding began at the beginning of that month for the Chardonnay grapes. This early development came to a halt between mid-May and mid-June thanks to below average temperatures. Generous summer conditions then set in, allowing the flowering to take place in ideal conditions around 26th June. Harvest started on September 19th. Blanc de Blancs” 1995 is made from a selection of grapes that come from four highly rated vineyards in the Côte des Blancs: Cramant, Chouilly, Le Mesnil sur Oger and Vertus, combining minerality, power and suppleness. As always with Bruno Paillard wines, only the first pressing - the purest – has been used. Produced in limited quantities, it is available in 75 cl bottles and in magnums. The disgorgement date is indicated on the back label. Minimum maturation in cellar after disgorgement and before shipment: 6 months to 1 year.

100 Chardonnay from Grand Cru villages in Côte des Blancs region: Cramant, Chouilly, Le Mesnil sur Oger and Vertus. Dosage: 6 g/l

Tasting notes
Eye: Deep green gold colour, sustained and bright. Very fine bubbles, still fairly abundant

Nose: Rich citrus and white peach aromas - deep; evolving toward almond and toasted bread

Mouth: Vivacious start for an aged wine, but without any trace of aggressiveness; complete and generous. The very long finish is testament to the voluptuous richness of the 1995 vintage

An ideal aperitif, will also enhance fish and any dishes that are not sweet
