A great Rosé de Saignée champagne. The blend is a majority of Pinot Noir with a touch of Chardonnay. Pinot noir is present under two forms. White wine of Pinot Noir: after a quick pressing, and a fast separation of the skins, the juice is very pale and can be vinified as a white wine. Red wine of Pinot Noir: obtained by a prolonged maceration of the juice on the shins. A touch of Chardonnay brings the necessary vivacity o balance the fruits of Pinot Noir. Rosé Première Cuvée has to counterbalance any harvest, rich or poor. Depending on the year, the blend includes a different percentage of “Rosé Première Cuvée Reserved Wines” aged in tanks and barrels. Rosé Première Cuvée spends three years of ageing in the cellar before disgorgement. Minimum maturation in the cellar after disgorgement and before shipment is 3 to 4 months.

The blend
The Pinot Noir juice under its two forms (white and red) is dominant in the blend. A significant percentage of Chardonnay - not disclosed - from the North of the Côte des Blancs is added for freshness. Dosage: 6 g/l

Tasting notes
Eye: Light copper gold colour, slightly raspberry when young, growing salmon pink when mature. Delicate bubbles are seen due to a noble raw material, cool temperatures in the cellar and long ageing in bottle

Nose: Vivacious and fruity, first aromas of redcurrant, fresh red fruit, leaning towards Morello cherry, strawberry and violet when opened. A light and very fresh citrus touch

Mouth: Fresh and generous liveliness. Sensation of ripe fruit seized in all its freshness, confirming the olfactory impression. Refined and pure with an elegant, long and delicate finish

Food pairing
An ideal wine for an entire meal with champagne, where it will be best appreciated with poultry, white meat, mixed salads and cheeses
