Bouquet refers to the smell or fragrance of champagne or any wine derived from its production or aging methods rather than the grapes themselves (the latter is known as “aroma”).

An example of bouquet is the smell and taste of “gout de champagne” which comes from long aging of the wine in contact with the yeast – the same yeast which has transformed the cuvée from still to sparkling during the second in bottle fermentation.
